The Kitchen Series: Mini Meatballs

As a family, we don’t eat a whole lot of meat but I’m trying my best to introduce everything possible to Aliyana mainly to expand her growing little palette, the last thing I want is for her to be a picky eater. Some moms may have different opinions but that’s OK. We are all different and so are our babies.

Aliyana loves this mini meatball recipe so I thought I would share with you mamas! I hope your littles enjoy it as much as mine. If you follow me on insta-stories, you’ll know how much I LOVE my Beaba Babycook so this recipe was prepared using it.

Ingredients:
1 tablespoon of cubed onion
1/4 cup sliced carrots
1/4 cup cubed zucchini
1 egg white
1 tablespoon of olive oil
1 tablespoon tomato paste
1 teaspoon oregano
1/4 cup breadcrumbs
1 tablespoon parmesan cheese (optional)
6 ounces of ground beef or turkey

Steps (as easy as 1-2-3):
Preheat oven to 375F.
Put the onion carrot, zucchini, mushroom in the Baeba steamer basket / pour water to level 1 in the tank / start cooking.
When the vegetables are cooked, remove them from the steamer basket and place in a bowl to cool. Discard any cooking liquid.
When the vegetables are cooled, put them in the Baeba blending bowl along with the egg white, olive oil, tomato paste, oregano and breadcrumbs and blend. Add the parmesan cheese here if you would like.
Add the ground beef or turkey to the bowl and gently pulse to mix. Don’t over mix so it becomes a puree.
Remove everything into a large bowl.
Measure out about a tablespoon of meat and gently roll into balls. I use a small melon scoop to ensure portions are equal.
Place the meatballs on a parchment-lined pan.
Bake for 25 minutes or until the internal temperature of the meatballs reach 165F
Let it cool and enjoy.

CAUTION: Don’t over bake because the outside of the meatball will become too hard for them to chew and swallow safetly.

I usually serve the meatballs with a some sort of pasta with a homemade tomato sauce,  I got this adorable snowflake pasta from Trader Joes on my last trip down to Bellingham. Aliyana loves sticking her little fingers through the holes and making a mess when she eats!
